2 cups – Greek Yogurt (for Mint Raita)
1 Bunch – Fresh Mint & Coriander
2 tbsp – Lemon Juice
1 tbsp – Sumac or Chaat Masala
3 Large – Cucumbers (Diced)
1 cup – Cherry Tomatoes
1 tbsp – Extra Virgin Olive Oil

Instructions
    Prepare Onions: Slice red onions into thin rings and soak in ice-cold water for 10 minutes to maintain crunch. Drain and toss with sumac and lemon.
      Mix Yogurt Base: Whisk yogurt with crushed mint and diced cucumbers for a cooling Mediterranean side.
        Garden Mix: Combine tomatoes, cucumbers, and olives in a bowl. Drizzle with olive oil and lemon vinaigrette.
          Final Seasoning: Add salt and fresh herbs just before serving to keep everything crisp and fresh.
