1 cup Yogurt (Smoothly whisked)
2 tbsp Achari Masala (Homemade)
5-6 Large Green Chilies (Stuffed)
3 tbsp Mustard Oil (Pure)
1 tbsp Ginger-Garlic Paste (Freshly crushed)

  • Mitti ki Handi (Clay Pot) For traditional slow cooking and authentic aroma
  • Wooden Spoon (Doi) To prevent scratching the clay surface
  • Small Bowl  For mixing yogurt and achari masala.
  • Sharp Knife For slitting the green chilies.

Method

  2. Heat Oil: Heat mustard oil in a Mitti ki Handi on medium flame until it starts to smoke slightly.
  3. Sauté Aromatics: Add a pinch of Kalonji and Saunf, then stir in ginger-garlic paste for 1 minute.
  4. Sear Chicken: Add chicken pieces and sauté until golden white for maximum juiciness.
  5. Slow Cook: Mix yogurt with achari masala, pour into the clay pot, cover, and slow cook for 30 minutes on low heat.
  6. Final Dum: Add stuffed green chilies, cover the lid, and let it simmer (Dum) for 5 minutes before serving.

  • Pro Tip: Agar aap ke paas mustard oil (sarson ka tail) bohot pungent hai, toh pehle usey dhuwan uthne tak garam karein, phir thanda karke dubara cooking shuru karein. Is se "Karwahat" khatam ho jayegi.
