Instructions
Prepare the Dry Rub: In a small bowl, combine instant coffee, brown sugar, paprika, garlic powder, cumin, salt, and black pepper. Mix well.
Coat the Protein: Brush the paneer or chicken cubes with oil. Generously sprinkle the Zaika Menu coffee-rub over them and massage gently to coat all sides.
Marinate: Place the marinated cubes in the refrigerator for at least 45 minutes to let the flavors penetrate.
Sear on Pan: Heat a grill pan on medium-high. Add a little butter and sear the cubes for 2-3 minutes per side until a dark, caramelized crust forms.
Air Fry Option: Alternatively, air fry at 180°C for 12-15 minutes for a guilt-free crispy finish.
Serve: Squeeze fresh lemon juice on top and serve hot with mint chutney.

                Recipe Notes
                • Zaika Menu Tip: Always use "Instant Coffee" for a smooth glaze. Regular ground coffee will leave a gritty texture.
                • Storage: You can store the dry rub in an airtight container for up to a month.
