[Group: Step 1: Marinate and Shallow Fry]
Combine all the chicken marination ingredients in a mixing bowl and coat the chicken thighs thoroughly.
Let the chicken rest and marinate for 15 to 20 minutes to absorb the deep flavors.
Heat 2-3 tablespoons of oil in a skillet over medium heat and shallow fry the chicken for 6-8 minutes on each side until golden-brown and cooked through. Remove and set aside.

In the same skillet, lower the heat and melt the butter. Add freshly chopped garlic and sauté for 60 seconds until fragrant without letting it burn.
Add the sliced mushrooms and sweet corn, cooking for 2-3 minutes until the mushrooms soften.
Pour in the milk and heavy cream, bringing the mixture to a very gentle simmer over low heat.
Stir in the grated cheese, salt, black pepper, and herbs. Keep stirring on low heat until the cheese melts into a thick, velvety sauce.

Spread a bed of hot, crispy French fries on your serving platter (optional).
Place the juicy, shallow-fried chicken thighs directly on top of the fries.
Generously pour the bubbling hot creamy garlic mushroom sauce over the chicken, garnish with an extra pinch of herbs, and serve immediately!

Chef's Tip: Always keep the heat on low when adding the milk, cream, and cheese to prevent the dairy sauce from splitting or curdling. Wipe mushrooms with a damp towel instead of washing them so they don't absorb excess water!
