Ingredients
  

  • 250 g Bhindi (Okra) Washed, dried, tips cut
  • 2 tbsp Oil Vegetable or mustard oil
  • 1 tsp Red chili powder Adjust to taste
  • 1 tsp Chaat masala Adds tangy flavor
  • 1/2 tsp Turmeric powder Optional
  • 1/2 tsp Black salt Or regular salt, adjust to taste
  • 1/2 tsp Cumin powder Optional, for aroma
  • 1/2 tsp Garlic powder Optional
  • Fresh coriander leaves Chopped, for garnish
  • Lemon wedges For serving

Equipment

  • 1 Baking tray or air fryer tray
  • Parchment paper (if oven method)
  • Rolling pin or heavy spoon (to smash bhindi)
  • Mixing bowl

Method
 

  1. Instructions:

    Prep Bhindi: Wash aur dry bhindi. Tips aur tail cut karein.
    Smash Bhindi: Bhindi ko tray par rakhein aur gently rolling pin ya spoon se thoda sa smash karein. Shape thodi bani rahe.
    Season: Oil aur saare masale evenly bhindi par coat karein.
    Cook:
    Oven: Preheat oven to 200°C, bhindi ko 15–20 min bake karein until crispy.
    Air Fryer: 180°C par 12–15 min, har 5 min par tray shake karein.
    Garnish & Serve: Bhindi ko fresh coriander aur lemon wedges ke saath serve karein.

  • For extra crispiness, double-fry the bhindi after the first fry and drain on paper towels.
  • Use fresh, firm okra for the best texture; avoid slimy or overly large pieces.
  • Adjust red chili powder according to your spice preference.
