  • 500 g Mutton/Beef Kaleji cubes
  • 1 Cup Dahi Yogurt
  • 2 Medium Pyaz Onions sliced
  • 2 Large Tamatar Tomatoes paste
  • 2 tbsp Adrak Lehsan Paste Ginger Garlic
  • 4-5 Hari Mirchein Green Chillies
  • 1 tsp Surkh Mirch Red Chili Powder
  • 1/2 tsp Haldi Turmeric
  • 1 tsp Dhanya Powder Coriander
  • 1 tsp Bhuna Zeera Cumin
  • 1/2 tsp Garam Masala
  • 1 tbsp Qasuri Methi
  • Namak Salt to taste (Add at the end)
  • 1/2 Cup Oil/Ghee

Equipment

  • Wok or Karahi  Deep frying pan
  • Chef's Knife For cutting kaleji and vegetables
  • Wooden Spoon or Spatula: For stirring/bhunayi
  • Mixing bowl For cleaning and soaking kaleji
  • Measuring Spoons For spices/masalas
  • Serving Dish To present the final recipe

Method
 

  1. Instructions
  2. Cleaning: Kaleji par 1 tbsp adrak lehsan aur 2 tbsp sirka laga kar 15 mins chor dein, phir thanday pani se dho lein taake smell khatam ho jaye.
  3. Masala: Karahi mein oil garam karke pyaz brown karein, phir adrak lehsan paste aur tamatar paste dal kar masale bhun lein.
  4. Frying: Kaleji shamil karein aur tez aanch (high flame) par 5 minute tak bhunain taake ye juicy rahe.
  5. Simmering: Dahi shamil karke halki aanch par 5-7 minute tak dhak kar pakaein jab tak kaleji gal na jaye.
  6. Finishing: Aakhir mein namak, qasuri methi aur garam masala dal kar 2 minute dam dein aur garma garam serve karein.
